Zucchini Muffins

YUMMMY!

These muffins were a HUGE hit in our house. Many thanks to Melanie for sharing the recipe.



Trust me – you may want to double the recipe because they will be gone much too soon.

Ingredients:
3 eggs
1 cup oil
2 cup sugar
2 cup grated zucchini
1 cup nuts (optional)
3 tsp vanilla
3 cup flour
1 tsp salt
1 tsp baking soda
¼ tsp baking powder
3 tsp cinnamon
½ bag semi-sweet chocolate chips.

Directions:
1.   Preheat oven to 350*
2.  Beat eggs until foamy. Add oil, sugar, squash, vanilla and nuts.
3.  In another bowl, sift together flour, cinnamon, salt, baking soda, baking powder. Add to the wet mixture, slowly, and mix until it is all incorporated. Add chocolate chips and mix.
4.  Pour into greased muffin pans. (Makes about 24).
5.  Bake at 350* for about 20 minutes (time will vary depending on your oven and amount of batter in each cup.
